For the Sauce:
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 lb Italian sausage or ground beef
- 1 can (28 oz) crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 1 teaspoon granulated sugar
For the Pasta:
- 1 lb (450g) rigatoni pasta
- Salt (for pasta water)
For the Cheese Layer:
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese (divided)
- 1 egg
- ¼ teaspoon nutmeg
- Fresh parsley, chopped, for garnish
Directions
- Cook the Pasta
- Boil salted water and cook rigatoni until just shy of al dente. Drain and set aside.
- Sauté Aromatics
- Heat olive oil in a skillet over medium heat. Cook onion until soft and translucent (5 minutes). Add garlic and cook for 1 minute.
- Prepare the Meat Sauce
- Add sausage or beef, breaking it up while cooking until browned. Stir in crushed tomatoes, tomato paste, oregano, basil, red pepper flakes, sugar, salt, and pepper. Simmer for 10–15 minutes, stirring occasionally. Adjust seasoning.
- Mix the Cheese Layer
- Combine ricotta, Parmesan, 1 cup mozzarella, egg, and nutmeg in a bowl. Mix well.
- Assemble the Dish
- Preheat oven to 375°F (190°C). Spread a thin layer of sauce on the bottom of a 9×13-inch baking dish.
- Toss cooked rigatoni with remaining sauce. Add half of the pasta to the dish. Spread the ricotta mixture over the pasta. Top with the remaining pasta and sprinkle 1 cup mozzarella on top.
- Bake
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10–15 minutes until cheese is golden and bubbly.
