  • 1 cup low-sodium vegetable stock
  • 1 cup heavy whipping cream
  • 15 sage leaves
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion powder (optional)
  • 3 oz (100g) grated parmesan cheese
  • 1 teaspoon chopped chives, for garnish (optional)

Directions

  1. Prep the Butternut Squash: Peel and thinly slice the butternut squash into half-rounds. Discard the seeds, or save them for another recipe.
  2. Cook the Shallot and Garlic: In a small saucepan, melt butter and sauté the shallot and garlic for 1–2 minutes until fragrant.
  3. Make the Roux: Add flour and whisk to combine, creating a roux.
  4. Add Liquids: Gradually whisk in the vegetable stock, followed by the heavy cream. Stir in the pepper, onion powder (if using), and sage leaves. Continue stirring until smooth, without bringing to a boil.
  5. Assemble the Gratin: Grease a 9×13-inch baking dish with butter. Pour 1/3 of the cream mixture into the dish, sprinkle with parmesan cheese, and layer the butternut squash slices in 2–3 rows, slightly overlapping.
  6. Layer the Remaining Squash: Drizzle the remaining 2/3 of the cream mixture over the squash and cover the dish with parchment paper, followed by foil.
  7. Bake Covered: Bake for 20 minutes, then remove the foil and parchment.
  8. Crisp the Top: Sprinkle the top with additional parmesan cheese and bake uncovered for another 10 minutes at 400ºF (200ºC) until golden and crispy.
